Barb’s Yummy Tomato Soup

With the colder weather creeping in, there’s nothing so comforting as a lovely hot soup. Let’s make it a little hotter. It almost doesn’t get easier than this when it comes to recipes.

What you need:
50ml of Barb’s Dead Horse
1 kg tomatoes
250ml full cream
A sprig or two of fresh basil
Some delicious crusty bread

Step 1
Boil some water and pour it over the tomatoes and peel off the skins. If you are using Truss tomatoes, save the stem.

Step 2
Place the tomatoes in a pot and simmer them down until they are completely soft and bubbling in their juice. Add almost all the cream and 50ml Barbs Dead Horse and blitz them all together with a stick blender. Throw that stem into the mix and allow to simmer once again, but do not boil.

Step 3
Once cooked, remove the stem. Ladle it into a bowl and use the remaining cream to do a fancy swirl on top and sprinkle on some chopped basil leaves and perhaps a sprinkle of cracked pepper. Serve with a slice or two of crusty bread.
