Crunchy Thai Chicken Salad

Here’s a little something you can put together if you are the one bringing the salad to the outdoor gathering. Easy to make and very tasty.

What you need:
50ml Bluey Zarzov’s Sweet Jinkies
20ml Fish sauce
50ml Lime juice (freshly squeezed)
A cooked rotisserie chicken
Carrots
Cabbage
Capsicum
Spring onions
Peanuts or cashews – your choice

Step 1
Take the meat off the chicken and place it in a mixing bowl. You can then shred it by hand, but if you have an electric egg beater, you can whizz it up into shredded chicken in only a few seconds.

Step 2
Julienne the carrots (matchsticks) unless you already bought them like that. Thinly slice the capsicum to the same length and slice the cabbage into shredded lengths to match. Cut the spring onions into rounds and roughly chop the nuts and toss it all in with the chicken.

Step 3
Pour in the lime juice, fish sauce and Bluey Zarzov’s Sweet Jinkies and give it a good mixing.

Step 4
Be the life of the party when you turn up with the most delicious salad on the day!
