Bring this retro one-pot classic into the modern era of isolation cooking, packing a punch that Mike Tyson would be proud of.
What you need:
A bottle of Bluey Zarzov’s Gone Troppo
400g Chicken breast or thigh fillets
250g Brown rice
1 Packet of French Onion Soup mix
1 Can of apricot halves
2 Carrots
A retro, funky cassarole dish
You can also add sides of steamed broccoli, broccolini or snow peas.
Step 1
Preheat your oven to 180C. Cook the rice using the reduction method, or use your rice cooker.
Step 2
Mix together the French onion soup powder, the apricots (including the syrup) and 25 to 50ml of Gone Troppo.
Step 3
Slice the carrots and cube the chicken breast or thighs and place them into the casserole dish in a nice pattern that will have absolutely no purpose later on.
Step 4
Pour the apricot mix over the carrots and chicken, making sure they are all coated.
Step 5
Bake for 40-50 minutes. Steam your greens while you are at it. Answer the phone and tell the 80’s that they can’t have their casserole dish back and to stop calling you.
