San Choy Bowel

Not for the faint hearted, this recipe will have the lettuce cups making you sweat from your eyeballs with a delicious smokey flavour and a heat strong enough to singe your nostril hairs. 

What you need:
2 tablespoons of Bluey Zarzov’s Bowelburner
2 tablespoons of hoisin sauce
2 tablespoons of oyster sauce
2 teaspoons of sesame oil
1 tablespoon of peanut oil or vegetable oil
500g pork mince
1 medium brown onion
2 teaspoons of finely grated ginger
2 cloves of garlic, peeled and crushed
12-16 baby cos lettuce leaves – chilled
Spring onions and red cayenne chilli to garnish

Step 1
Dice the onion finely using the method you learned in season one of Masterchef, heat the peanut or vegetable oil in a frypan and cook the onion until is goes soft and slightly translucent.

Step 2
Add the pork mince and cook for 5 minutes or till slightly browned, making sure to break it up so you don’t end up with big hog lumps.

Step 3
Reduce the heat to medium and stir in Bluey Zarzov’s Bowelburner, the sesame oil, oyster sauce, hoisin, garlic and ginger. Add a tablespoon of water and continue to cook for 2-3 minutes.

Step 4
Spoon the pork mixture into the lettuce cups and garnish with chopped spring onion and red chilli.

Step 5
Have some tissues handy as you cry tears of happiness.
